Wood Pigeon Casserole

Wood Pigeon Casserole!

Firstly you have to get your Wood Pigeons!
These birds are plentiful around here.
When you put food out for the wild garden birds the 'Woodies' will barge in, pushing the smaller birds out of the way and tend to scoff all the food. This makes for some real fat birds which are but a few steps away from being 'table ready'.

I use two methods to catch them: -
The first method is to rig up a net. I use a net which I normally employ to cover the raspberry bushes. This net is made from green nylon and is quite strong. It measures about 4 metres square. I secure 3 sides to the ground with pegs and bamboo canes. You need to use the bamboo canes or the 'woodies' will fight their way out. I raise the centre of the net by placing a garden fork in the centre, stuck into the lawn. On the 'open' side of the net which faces the house I tie a 5 ounce fishing weight. I then run a length of fishing line up to the bedroom. pull the line tight to raise the open side of the net off the ground and then I tie it off. It is that simple.

Simply throw some pieces of bread into the netted area around the garden fork and wait for the 'Woodies'. Once you see one or two of them eating the bread, let go of the fishing line. The 'Woodies' will very often continue eating the bread while I walk up to the net. I approach the net from the 'open' side and they usually make a break for it to the far side. This is where it is important to peg down the net with bamboo canes as the birds are quite strong.
I then quickly despatch the birds by breaking their necks.

The second method is to shoot them with my Scoped Crosman .22 air rifle.

I pluck and draw the birds as you would a Chicken.

When I have four of these plump beauties, I take a Colemans Chicken Casserole packet mix, add carrots, Parsnip, Onions and potatoes. Follow the instructions on the packet but do increase the cooking time. I simmer in a low oven for as long as possible. I do it for about 4 hours.
They taste absolutely wonderful and four 'Woodies' will serve two people. I do the dish for myself and my Stepson as our respective Wives refuse to try it. This dish would cost a pretty penny served up in a London restaurant!
